I que el seu nom ve del pintor Vittore Carpaccio, per la semblan\u00e7a crom\u00e0tica amb els seus quadres?<\/p><p>Sigui com sigui, el que no \u00e9s cap secret \u00e9s que l\u2019estiu \u00e9s \u00e8poca de carpaccios. Un entrant perfecte que s\u2019ha fet un lloc en la nostra cuina estiuenca, en totes les seves formes i colors. Salm\u00f3, bacall\u00e0 i fins i tot la seva versi\u00f3 en gambes s\u00f3n una opci\u00f3 perfecta per combinar-lo amb un vi blanc com l\u2019Agaliu, fresc i intens, amb fermentaci\u00f3 en fusta, que aguanta a la perfecci\u00f3 els peixos crus i marinats. L\u2019estiu \u00e9s un bon moment pels fumats, que ens aporten aromes intensos en plats molt frescos. No us quedeu nom\u00e9s amb el t\u00edpic salm\u00f3 fumat: exploreu horitzons amb el bacall\u00e0 o la sardina i atreviu-vos amb el peix espasa, no us decepcionar\u00e0. I fer-ho, \u00e9s un plaer pels sentits. Si a m\u00e9s \u00e9s estiu i el serviu ben fred al costat, per exemple, d\u2019un sushi, l\u2019\u00e8xit est\u00e0 assegurat.<\/p><p>L\u2019escum\u00f3s L\u2019Olivera Reserva \u00e9s tamb\u00e9 la nota refrescant i untuosa de qualsevol crema freda: tasteu-lo amb una sopa freda de mel\u00f3 amb encenalls de pernil, o amb una <em>vichyssoise<\/em>.
