Us ho volem explicar.<br \/><\/strong><br \/>L&#8217;oli verd \u00e9s el suc de les olives primerenques, collides durant les primeres setmanes de la campanya, quan l&#8217;oliva encara \u00e9s verda. D&#8217;aqu\u00ed venen les propietats sensorials d&#8217;aquesta verdor: aromes frescos d&#8217;herba tallada, ametll\u00f3, carxofa o tomaquera. Intens, amb amargs i picants marcats, sabors salvatges que ens evoquen els inicis de la recol\u00b7lecci\u00f3.<\/p><p>Els olis verds, precisament perqu\u00e8 s\u00f3n acabats de fer, sovint es presenten en un format t\u00e8rbol o poc filtrats, amb l&#8217;objectiu d&#8217;aprofitar al m\u00e0xim l&#8217;expressi\u00f3 pr\u00f2pia d&#8217;aquesta oliva primerenca. Aix\u00f2, unit a la tradici\u00f3 i la il\u00b7lusi\u00f3 de consumir el producte &#8220;tal com raja del mol\u00ed&#8221;, han fet que l&#8217;accepci\u00f3 &#8220;del raig&#8221; s&#8217;hagi popularitzat.
