Tots aquests elements van provocar un desenvolupament limitat de les plantes i una reducci\u00f3 considerable de la producci\u00f3 (entre un 30 i un 80% inferior a la mitjana en les nostres condicions de viticultura de sec\u00e0). Aquestes condicions extremes de calor i sequera ens van obligar a avan\u00e7ar molt la verema per a mantenir l\u2019equilibri i la qualitat del ra\u00efm. Vam iniciar-la molt aviat, el 18 d\u2019agost, i vam acabar-la el 4 d\u2019octubre. En boca hi trobem fruita molt confitada, amb un torrat intens per\u00f2 elegant. Vi ample i amb cos, amb una acidesa marcada que li d\u00f3na un final fresc i persistent. Convida a ser maridat amb formatges cremosos i tamb\u00e9 amb la pasta gratinada amb beixamel. Sense deixar de banda l\u2019aposta per les varietats hist\u00f2riques i mediterr\u00e0nies, a L\u2019Olivera seguim cultivant, a Vallbona, tres parcel\u00b7les d\u2019aquesta varietat francesa com a petit homenatge a la tradici\u00f3 que ens ve de la Borgonya: regi\u00f3 bressol del Cister. Aquest orde mon\u00e0stic \u00e9s considerat pioner en l&#8217;agronomia a Europa, atesa la seva gran aportaci\u00f3 a l&#8217;estudi i l&#8217;organitzaci\u00f3 del territori.<br \/>\nAmb l\u2019Eixaders explorem, des del principis dels anys 90, les potencialitats que ens dona el Chardonnay en aquest paisatge de sec\u00e0 i de certa al\u00e7ada, arribant a una maduraci\u00f3 lenta i un equilibri molt interessant entre grau alcoh\u00f2lic i acidesa. La fermentaci\u00f3 i crian\u00e7a en b\u00f3ta i el <em>battonage<\/em> peri\u00f2dic ens donen un vi amb una gran capacitat d\u2019envelliment. Per la seva frescor i intensitat arom\u00e0tica, l\u2019Eixaders \u00e9s un bon exemple que, en \u00e0mbit mediterrani, tamb\u00e9 es pot fer monovarietals de Chardonnay equilibrats, amb una bona combinaci\u00f3 de la frescor i el grau alcoh\u00f2lic, mantenint volum i golositat.<\/p>\n<p class=\"label-sans-serif\">Paisatge<\/p>\n<p class=\"small-sans-serif\">ORIGEN: Vinyes Vallbona de les Monges, a la subzona Valls del Riu Corb de la DO Costers del Segre. Paisatges de parcel\u00b7les caracteritzades pels marges de pedra seca, que delimiten les vinyes i conserven la fertilitat dels s\u00f2ls i l\u2019efici\u00e8ncia de l\u2019aigua.<br \/>\nS\u00d2LS: S\u00f2ls argilocalcaris amb nivells de pedregositat i profunditat variables.<br \/>\nCLIMA: El clima \u00e9s mediterrani continental, amb hiverns freds i secs i estius calorosos, dulcificats pel vent que, a les tardes, ve del mar (la marinada) i refresca les nits, sobretot durant el per\u00edode de maduraci\u00f3.
