In our area, rainfall was very scarce until autumn, adding to the persistent<br \/>drought of the previous two years. As a result, under dry-farming conditions, plant<br \/>development was more about resilience than productivity. Additionally, the frost on<br \/>the night of April 23 severely affected the tender shoots, especially in the vineyards<br \/>located at the bottom of the valley. These conditions reduced productivity to 20% of the annual average. In terms of temperature, the harvest was not brought forward as much as in the previous two vintages, and it lasted a bit longer: it took place between August 21 and October 8. The grapes are hand-harvested and<br \/>pressed as whole clusters, including stems. Fermentation takes place at a controlled<br \/>temperature (15\u201317 \u00b0C) in American and French oak barrels (88%), with new oak<br \/>never exceeding 15% to preserve the varietal character of Macabeo. The wine is<br \/>aged on its lees with weekly<em> b\u00e2tonnage<\/em> to build volume and texture on the palate. Lactic notes and a spicy hint of white pepper stand out. On the palate it is unctuous, creamy and with a sweet spot. Fresh entry on the palate and good persistence in a wine that\u2019s ideal for cold starters, p\u00e2t\u00e9 and escalivada. The blue bottle evokes the pottery the nuns painted, one of several manual tasks they performed. This age-old recipe was the starting point for researching a new expression for the Macabeo grape, linked to the recovery of local winemaking traditions. The result is the well balanced and sincere expressiveness of the Macabeo that grows in this part of the Corb River Valley, giving a varietal wine aged in oak barrels and with a compelling character that makes it indulgent, complex and original.<\/p>\n<p class=\"label-sans-serif\">Terroir<\/p>\n<p class=\"small-sans-serif\">ORIGIN: Vineyards around Vallbona de les Monges in the Corb River Valley subzone of the Costers del Segre DO. Plots characterised by the drystone walls that surround the vineyards, preserving the fertility of the soil and the efficiency of the water. SOIL: Chalky clay soil with variable levels of stoniness and depth. CLIMATE: The climate is continental Mediterranean, with cold dry winters and hot summers tempered by the soft evening breeze blowing in from the sea that cools the night, particularly during the ripening season. The scarce rainfall is concentrated in autumn and spring (350-450 mm yearly).<\/p>\n<p class=\"label-sans-serif\">Varieties<\/p>\n<p class=\"small-sans-serif\">Macabeo<\/p>\n<p class=\"label-sans-serif\">Vine growing<\/p>\n<p class=\"small-sans-serif\">Organic farming.
